The sturdy lid locks down during canning or cooking; an inner sealing ring keeps the steam in. In addition to a pop-up pressure indicator and a double steam release mechanism, there is an overpressure plug that will let off steam if it builds up excessively. The U.S.D.A. recommends pressure canning as the only way to can meat, fish, poultry, and all vegetables. This unit has the capacity needed for preparing large quantities of food and pressure cooking inexpensive meat cuts to juicy tenderness in a short time. It is stainless steel with a composite bottom for better cooking.
